And the fat that drips off onto the coals vaporises and comes straight back up as smoke, which settles into the meat while it cooks.
You can taste the difference immediately. Charcoal-grilled tikka has a faintly bitter, smoky edge at the char points and stays wet underneath. Plate-grilled tikka is evenly cooked, evenly coloured, and tastes only of its marinade — pleasant, but it is not the same dish.
The trade-off is honest: charcoal takes longer and cannot be batched in advance. Your BBQ goes on the coals when the order comes in. That is why BBQ takes longer than a curry, and why large platters need more notice than a single portion.

What to Order If Your Team Has Never Had This Before

- Beef Seekh Kabab — minced beef with onion and green chilli, moulded on a skewer. Firmer and considerably more assertive than the chicken options.
- Fish Tikka — good for anyone avoiding red meat, and less common on Abu Dhabi menus than it should be.
