Mild Does Not Mean Bland

There is a persistent assumption that a mild curry is a compromised one — that heat and flavour are the same axis, and turning one down turns the other down with it. Qorma is the standing argument against that.

Chilli is one ingredient among thirty in a desi kitchen, and it is not the one doing most of the work. What gives a qorma its depth is onion cooked patiently until it collapses and browns, yogurt added slowly enough not to split, and whole spices bloomed in fat so they perfume the oil rather than sit in the sauce as powder.
